Why just mobile?...

This guide is designed to get new people into Monero and to start sending/receiving as quickly as possible (within 2minutes). Mobile is the easiest way to do this, it also is portable which means you can take your Monero with you in your pocket and spend/receive wherever you are.

Cake has many benefits, it's non-custodial and open-source. It also has some of the best resources in terms of video content to help people, which I linked in the above post.

Shall I trust a wallet to generate my seed?

Ultimately no, if security is a top priority then a offline/cold storage wallet is the way to go, however this is far more complex to set-up and for receiving small tips is not worth the effort imo. Here is a Reddit post that outlines the process.

Is there a way to trust a provider (i.e. stasher.news) and authorize it to sign transactions going toward it?

This would require a browser/web based wallet which is attached to your Stasher account. I could see them implementing this in the future, but right now it is not an option.
