I've used and can highly recommend both Mullvad and IVPN. Both of these promise not to keep logs, both have anon signup (no email), both accept Monero, and both have tons of features.
A new one to keep an eye on is Obscura. They don't just promise not to keep logs, they can't keep logs. They also accept Monero, and have anon signup. The drawback currently is that Obscura is not as feature rich as Mullvad or IVPN. One feature I'm already missing with Obscura is a split tunnel. Obscura is also more expensive than Mullvad or IVPN.
I just moved to using Tor VPN recently and routing all of my system traffic over Tor by default.
Why whats wrong with mullvad? I often think tools are perfectly ok for their risk threat (general guy not doing many things that are illegal) but people get in this obsessive frame as if they are some sort of suburban pablo escobar

Basically most VPNs centralise all web traffic into the same data centres you are trying to evade or mitigate, it is therefore a conflict of interest for the VPN to protect you from the system they are themselves using. Most of these international centres are still owned by the US/UK so a court order will not protect you if you are hopping into a country like Switzerland for example.

If I understand him correctly, he offers a service which splits profiles and packets bewteen apps / sessions to mitigate this, while also leveraging centres which don't cross sea cables.
Mulvad, Tor, or IVPN are the ones I like. Use Tor to sign up, monero to pay, connect no real life info to account. Check out watchman privacy, techlore, thehatedone for good reviews/interviews of the owners.
