Oh this is right up my lane and I could tell many personal stories here haha.
Short and sweet. Grew up young and lean and fast. 20's came and I got fat as well as smoked.
Hit 35 wanted to quit smoking so started running again. 2 years later did my first triathlon then Ironman.
Next year started taking Nutrition diploma.
I'm 45 now and I'm a Board Certified Nutritionist now specializing in Sports and Fitness.
Man what I learn about food, energy, metabolism, cells, disease and more the past 10 years is insane.
But one thing I did learn is that food is very simple to the body so I live by a few key things now.
There is no such thing as an Essential Carbohydrate. I eat them but they serve a purpose when I eat them and I don't eat more than 100 grams on any given day.
I don't use oils at all. Just tallow now. I cook everything in my own cast Iron Pan.
Seed Oils are shit and they are in everything even the beef and the chicken so grass fed it is.
For the most part I'm a big BBBE type so beef, bacon, butter and eggs. I also am a big greek yogurt, kefir and whole milk fan because the gut microbiome is incredibly important to mental health and many happiness chemical come from the gut like serotonin.
I also fast everyday 14-16 hrs and more depending on the day or just how I'm feeling that day. I never get hangry like I use to when I consumed Carbs to no end.
I don't think it's that people don't give it shit. It's that food has been turned into entertainment and not nourishment for our bodies.
People are detached from the body; they honestly don't even think about it on a given day they just take it for granted.
That is no a one sided problem, it's been created through decades of misinformation and blatant lying about how nutrients work in the body.
Just look into Dr. Kellog a bit or Procter and Gamble with Crisco or Canada with the invention of Canola Oil post WW2.
The human body is already a very finely tuned machine we just somehow thought we were smarter than our own bodies.
Another thing I always tell myself is that, "It's my job to take care and power my cells; yes they are intelligent but they need me to give them the tools to carry out their jobs."
you sound like my twin brother. same journey! been mostly carnivore too minus the "board certified nutritionist" part -- I despise boards and certifications -- certified doctors spent decades telling us fat was bad. always DYOR and think for yourself.
